How Runamok Maple Syrup is Made
The process of getting syrup starts mid-winter when trees are tapped by drilling a small hole in the trunk of a sugar or red maple and inserting a spout. When spring comes, the sap starts to run and flow into the tubing that is connected throughout the entire forest.
When the sap comes into the sugarhouse, it is boiled down to syrup in an intense process for long hours over the course of six weeks. Once the syrup has reached its optimal concentration, it is then filtered and stored in barrels.
