Rancho Gordo’s Pinole Azul starts with lightly roasting heirloom blue corn, grinding to a fine powder and adding little piloncillo (raw sugar) and canela (true cinnamon).
Tasting Suggestions:
- Make a refreshing drink out of it by adding about 1 cup of pinole per liter of water. Boil it for 5 minutes stirring continuously. Try adding milk of your choice and top with fruits or nuts.
- Consume as is like a pixie stick
- Make delicious pancakes
- Coat chicken or turkey before pan frying
- Use as a substitute to flour
